Description

Choclo, also known as the corn of Peru and Cusco (the capital of the Incas) is a white corn with up to 5 times the size  of common corn. It has a creamy, hazy texture and a characteristic corn flavor with notes of nuts, although it is less sweet than the common corn. It is an essential ingredient in authentic Peruvian ceviche, but it is also a beloved ingredient in Mexican cuisine where it is served in soups (e.g. pozole), in Chilean cuisine where it is found in the famous dish Pastel de Choclo, and in many other recipes!
